FSMS (Food Safety Management Systems) CAVALIER FOODS

As compared to 30 years ago, consumers today are eating more food away from home, demanding more processed food, and are less experienced with proper handling techniques for safe cooking of raw foods when they do prepare food at home. Today, when people do prepare their own meals they depend on others for their food safety.

At Cavalier Foods, Food Safety and Quality is of paramount importance and management commitment towards Food Safety dates back to 2008 when the original company Just Lamb Trading obtained HACCP Certification indicating compliance to the SANS10330: 2007 Code of Practice. HACCP is an acronym for Hazard Analysis Critical Control Points.

The Food Safety Management Systems implemented at Cavalier Foods is displayed in the figure 1. quality

HACCP is an internationally recognized food safety management system that has been applied from primary production, to harvesting to food , beverage and meat processing, retail and catering industries.

At the processing level, in particular, and properly applied, HACCP may offer the best mode to enhance the safety of raw foods of animal origin, by minimizing the incidence and levels of pathogenic microorganisms. The company persevered to maintain food safety standards and exceed customer requirements by embarking on the implementation of ISO 22000: 2005 and achieving successful certification in 2011.

ISO 22000:2005, Food safety management systems – Require¬ments for any organization in the food chain is the first man¬agement system standard on food safety to go beyond the recommendations put forward in 1993 by the Codex Alimen¬tarius Commission.

ISO 22000 integrates the principles of the Hazard Analysis and Critical Control Point (HACCP) system and application steps developed by the Codex Alimentarius Commission. By means of auditable requirements, it combines the HACCP plan with prerequisite programmes. Hazard analysis is the key to an effective food safety management system, since conducting a hazard analysis assists in organizing the knowledge required to establish an effective combination of control measures. ISO 22000 requires that all hazards that may be reasonably expected to occur in the food chain, including hazards that may be associated with the type of process and facilities used, are identified and assessed. Thus it provides the means to determine and document why certain identified hazards need to be controlled by a particular organization and why others need not
